My brother and I have decided to not stress the holiday...as in we don't have to make a holiday event happen and we don't have to give gifts (unless we just happen to see or think of something that we must buy for the other). We usually spend Thanksgiving together, although this year he didn't make it but his beautiful daughter, Rachel, and her boyfriend, Randy, did. But he called me after Christmas to see if we could get together with a few of our cousins. He is much better at staying in touch than I am.
So on the Saturday after Christmas we had dinner at his house in rural Southside Virginia with him, his new lady-love, Karen (who is absolutely awesome...he has met his match..in, oh, so many ways), two cousins, a cousin-in-law, and a great nephew. The food he and Karen cooked was just over the top in deliciousness. I had to make some contribution...and knowing the competition, it had to be good. Cara, my older daughter, gave me the Smitten Kitchen Cookbook for Christmas...just the ticket.
The book just happens to open to page 99 every time I open it...Butternut Squash and Caramelized Onion Galette. I thought it might be challenging. I don't do pastry. But it went together so well. And it was so good. The recipe is on the Smitten Kitchen website. You should try it.
Looks yummy! Good for you for meeting the challenge.
